CHICKEN SOSATIES

Ingredients for 4

  • 16 pieces Sadia Coated Crumbed Crispy Chicken Cuts, cooked according to packet instructions

Sosatie Sauce:

  • 30ml oil
  • ½ onion, finely chopped
  • 1 clove garlic, finely chopped
  • 5ml fresh ginger, grated
  • 45ml apricot jam
  • 45ml white wine vinegar
  • 15ml mild curry powder or curry paste
  • 5ml ground cumin
  • Salt and milled black pepper

Sosaties:

  • 4 bamboo skewers, soaked in warm water, or 4 metal skewers
  • 12 sundried apricots
  • 1 red onion, cut into 3cm cubes
  • 1 green or yellow pepper, cut into 3cm cubes

To Serve:

  • Pita or naan breads with cucumber raita
  • Fresh parsley, optional

Preparation:

  • 1. Fry the onion in the oil in a small pan for 5 – 6 minutes. Add the garlic and ginger and cook a minute then add the remaining ingredients. Cook for 3 minutes, then set aside.
  • 2. Thread the Sadia Coated Crumbed Crispy Chicken Cuts onto skewers, with the apricots, onion, and pepper in between.
  • 3. Preheat the oven to 180°C. Baste some of the sosatie sauce over each skewer and cook in the oven for 10 minutes, turning once during cooking.
  • 4. Serving suggestion: serve on a toasted naan or pita bread, with some cucumber raita and fresh parsley. Serve with the remaining sosatie sauce.
