CHICKEN SOSATIES

Ingredients for 4
- 16 pieces Sadia Coated Crumbed Crispy Chicken Cuts, cooked according to packet instructions
Sosatie Sauce:
- 30ml oil
- ½ onion, finely chopped
- 1 clove garlic, finely chopped
- 5ml fresh ginger, grated
- 45ml apricot jam
- 45ml white wine vinegar
- 15ml mild curry powder or curry paste
- 5ml ground cumin
- Salt and milled black pepper
Sosaties:
- 4 bamboo skewers, soaked in warm water, or 4 metal skewers
- 12 sundried apricots
- 1 red onion, cut into 3cm cubes
- 1 green or yellow pepper, cut into 3cm cubes
To Serve:
- Pita or naan breads with cucumber raita
- Fresh parsley, optional
Preparation:
- 1. Fry the onion in the oil in a small pan for 5 – 6 minutes. Add the garlic and ginger and cook a minute then add the remaining ingredients. Cook for 3 minutes, then set aside.
- 2. Thread the Sadia Coated Crumbed Crispy Chicken Cuts onto skewers, with the apricots, onion, and pepper in between.
- 3. Preheat the oven to 180°C. Baste some of the sosatie sauce over each skewer and cook in the oven for 10 minutes, turning once during cooking.
- 4. Serving suggestion: serve on a toasted naan or pita bread, with some cucumber raita and fresh parsley. Serve with the remaining sosatie sauce.
